Mexican - Enchiladas with Cheese (Vegetarian)
We've been told by many that we have the best enchiladas anywhere. Try them and see if they are your favorite. A tempting cheese enchilada with Montery Jack and Cheddar cheeses with roasted green chilies - smothered in either a red or green enchilada sauce.
Large serves 8 - Small serves 4.

| Thaw in refrigerator.
Preheat oven to 350º F.
Bake 20 minutes uncovered, or when it reaches 160º F on cooking thermometer.
Freezer instructions:
Preheat oven to 425º F.
Bake for 25 minutes covered.
Lower oven temperature to 350º F.
Bake uncovered an additional 20 minutes until thermometer reaches 160ºF. |
