Mexican - Enchiladas with Cheese (Vegetarian)
We've been told by many that we have the best enchiladas anywhere. Try them and see if they are your favorite. A tempting cheese enchilada with Montery Jack and Cheddar cheeses with roasted green chilies - smothered in either a red or green enchilada sauce. Large serves 8 - Small serves 4. FIX-A-FEAST assembled not avaliable for customer assembly so any special request please include them in the comments to the chef (i.e. no onions, etc).

Cooking Instructions:
Thaw in refrigerator. Preheat oven to 350º F. Bake 20 minutes uncovered, or when it reaches 160º F on cooking thermometer. Freezer instructions: Preheat oven to 425º F. Bake for 25 minutes covered. Lower oven temperature to 350º F. Bake uncovered an additional 20 minutes until thermometer reaches 160ºF.

Serve with lettuce, sour cream, guacamole, and a side of refried beans
